I Scream You Scream...

... we ALL scream for icecream!

Now that Spring has sprung, and invited daylight savings along for the ride, for some reason I can't stop thinking about icecream... even though normally I don't eat or crave it at all! (and no, I'm not pregnant!) 

I have discovered relatively late in life that there is just something so deliciously decadent about diving into a bowl of icecream (or spooning it straight from the container!) and I am making up for lost time by sampling every flavour I can get my hands on! 

I'm wondering whether you can tell a lot about a person by their favourite flavour of icecream...

Me? I'm currently the poster girl for Cookies 'n' Cream! What's YOUR flavour?

Claire (Modern Family): I'm a mom traveling with my kids. This isn't a vacation; it's a business trip!

Deep down, I sorta, kinda find holidays with my young children a bit hard work.  Same shite, different location. There's never a question of 'getting away from it all' - the whining, the bickering, the 'mum can I'ing... it's all coming with us.

Still, that doesn't stop me from being euphoric at the idea of getting away from it all. The relaxing, the lack of routine, the newness of it all. Frankly, these days the thrill is in the idea of a holiday.

So, theoretically, I've already had my holiday. I've been looking forward to this week away up the coast of NSW for two months now. We're in a house on a lake (the view above is what I'll be looking at - the photo was taken the last time we were at the lake) with a darling cafe right by us. There are little tinnies for fishing and bikes for riding, a playground, a sandy beach, a BBQ, a deck with a view. Magic. And for all my moaning, I really can't wait to be with my gorgeous tsunamis and their equally yummy dad  for a whole week, uninterrupted. Gran and Pops are even joining us, so quality time for everyone - something I cherish.

While I'm gone, I've asked a few of my most favourite writers to come and write on the topic "What my children have taught me about myself". It's a topic that interests me hugely and my guest writers are all so very unique in their approach to blogging and mothering that I think we're in for a real treat.


My Friday writer is Gillian Martin, co-author of Cocktails at Naptime: the Woefully inept Guide to Early Motherhood . Gillian has generously given me two copies of her very funny, very fabulous book to give away. Pina Colada gluten-free cupcakes

Strawberry Daiquiri & Pina Colada Cupcakes
Pina Colada (makes 12 muffin size cakes)

Ingredients
110g (4 ounces) butter, softened
150g (5 ounces) caster sugar
2 eggs
225g (8 ounces) Gluten Free self-raising flour
150g pineapple, cut into small chunks
160ml coconut milk


Cooking instructions
  1. Preheat oven to 160-180 deg C (325-350 deg F).
  2. Line muffin tray with paper cases.
  3. Beat butter and sugar with an electric mixer until the mixture turns a pale colour.
  4. Beat in eggs, flour, and coconut milk.
  5. Stir in pineapple chunks.
  6. Divide mixture among cases.
  7. Bake for 25-30 minutes.
  8. Place cakes on a wire rack to cool.

To decorate (for 12 muffin size cakes)

Ingredients
350g caster sugar
2 egg whites
4 tablespoons coconut rum
12 cocktail umbrellas
12 fresh coconut chunks
12 Maraschino cherries

Instructions
  1. Whisk caster sugar, egg whites and rum in a heatproof bowl placed over a bowl of hot water.
  2. Whisk until the mixture turns warm and the sugar dissolves.
  3. Remove from heat and continue to whisk until mixture is cold and stands in stiff peaks.
  4. Pipe in a swirl on top of cakes.
  5. Add a chunk of fresh coconut.
  6. Spear a maraschino cherry with the cocktail umbrella and stick in top of cake.
