Caught in a moment


The other night after work I was walking from the bus stop to my in-laws for dinner.

They live in a quiet neighbourhood which seems to favour obese topiary balls and rose bushes with claws. Row after row of houses sit shyly on neat square blocks, almost holding hands with their neighbour, but not quite. They look out at the world through lazy half-shuttered windows and glow smugly from within.

It was a cold night and no one was about. The hum of distant traffic ebbing and flowing sounded almost like the sea while newly parked cars ticked gently. The sudden lurch of a bus on the main road silenced birds I hadn't noticed were there.

A rich waft of sweet Daphne gave me pause outside a brown-brick Federation, renovated to within an inch of its life. A large glass and steel structure had been bolted on - no doubt sold to the Council as a tasteful addition that enhanced the classic lines of the old place. But the quaint, picketed verandah was having none of that and seemed to frown at the huge modern structure above it. I used to be enough, the old house seemed to sigh.

My footsteps tapped lightly on the footpath and the cold air slapped my face. Hurry up, the cold admonished. But I didn't want to hurry.

I wanted to savour the moment. Just a moment. Nothing special.

Eton Mess Fudge

I love fudge and have not made any for years, so thought it about time I make some. I started with a fresh strawberry creamy fudge with chunks of meringues in it, just like the real British summer time treat, Eton Mess. First served to students in the 1930s at the prestigious Eton College after a dog sat on a picnic hamper!

Next I want to have a go at some other British Summer pudding inspired fudge. Perhaps a fresh strawberry and custard fudge to emulate the trifle or a mixed fresh strawberries, blackberries, raspberries and red currants fudge to emulate the Summer Pudding.

I packaged mine up in pretty pink strawberry bags I bought in Jusco.

Eton Mess Fudge (makes 24 pieces)

Ingredients
  • 1 cup of fresh strawberries
  • 56g (4 tbsp) unsalted butter
  • 555g (3 cup) caster sugar (superfine sugar)
  • 1 cup double cream
  • 1/4 cup milk
  • 1/4 cup light corn syrup
  • 4 meringue nests, crumbled
  • Cooking spray or butter


Cooking instructions
  1. Line a 8" square pan with foil, lightly butter or spray foil.
  2. Blend strawberries in a blender so they are pureed.
  3. Place the pureed strawberries, butter, sugar, cream, milk and corn syrup in a heavy based jug.
  4. Stir over medium heat until mixture starts to boil.
  5. Place candy thermometer in jug and leave until mixture heats to "soft ball", 238 deg F
  6. Remove from heat, do not stir.
  7. Leave to cool to 120 deg F.
  8. Beat mixture with a wooden spoon until it loses its gloss.
  9. Quickly stir in broken meringues.
  10. Pour mixture into greased pan.
  11. Leave to set
  12. Cut into small squares
  13. Store in airtight container in fridge.

Who said Boys Can't wear PINK?

Happy Saturday, folks! I am spending an exciting Saturday night in... I just inhaled most of an entire pizza from GPK, then two Freddo frogs and am contemplating a tim tam! Gluttonous? Moi? But its the weekend, and I did a Spin class this morning, so it kinda equals out.... doesn't it?

Anyway. Just checking in because I just uploaded some pics and I cannot help but share these photos of my little sonny-boy modelling my new baby-pink-n-polka-dots bow tie this afternoon. My hearteth melteth.

And who said men can't wear pink?
