One stormy afternoon...

Yesterday afternoon was stormy on the farm... heavy grey clouds loomed overhead and it was the perfect afternoon to stay inside in front of the TV. But we didn't, we went for a walk in the overgrown scrub surrounding our cottage instead... This is what we discovered.

There is almost a full page of my goodies in the Shop 4 Kids mag and they have done a fantastic job of doing something very different with the glassware.

it is a dream of mine to one day have one of these beach box beauties in our family. i love how they can be such a great place for your family & friends to meet. enjoy a day/night at the beach & have a little place to be sheltered from the harsh Aussie sun. i would fill it with bean bags & a hammock. lots of fresh snuggly towels & would no doubt have happy snaps on the walls of everyone enjoying themselves there. it's good to dream!

my only dilemma would be what colour to paint it?! what colour would you choose?

Mini stack of gluten free pancakes

At the weekend I made gluten free pancakes, some of which I ate! The rest I wrapped in cling film and froze, ready to heat and serve tonight for Shrove Tuesday.

Mini stack of Gluten free pancakes (makes 20 mini pancakes) adapted from Doves farm recipe

Ingredients
  • 200g gluten free plain flour
  • 2 eggs
  • 500ml milk
  • 1 tsp vanilla paste
  • Sunflower oil spray

What you will need
  • Extra small frying pan

Cooking instructions
  1. Place the flour and eggs in a mixing bowl
  2. Gradually pour in milk and beat until you have a thin batter
  3. Add vanilla essence and mix well
  4. Leave to rest for at least an hour
  5. Spray frying pan and heat to a high temperature
  6. Pour about 30ml of batter into hot pan and swirl mixture until you have an even layer
  7. Cook until golden, turn over and cook other side
  8. Serve warm

Sliced lemons
Blueberries & maple syrup
Lemon juice & sugar

Things I have seen that I wish I could see forever


Forget unseeing, my life has also known so much beauty that my eyes get tired from looking. Here I could put my husband, my children, Ryan Gosling and all the usual suspects. I'm going a bit more 'external' than that. I have also allowed myself only two travel-related items as I could write down twenty of them without stopping if given half the chance.

Things I have seen that I wish I could see forever.

1. Petra at sunset
It would mean going back to Jordan, but it would be worth it.

2. Fireflies in Mozambique
It was the most amazing sight you could imagine.

3. My house just after I've cleaned it
If only it would stay forever in that state. Forever clean, I wanna be forever clean... sorry, had a bit of a random Youth Group moment there.


4. Our bank account just before we put down the deposit on our house
It was so big and purdy.

5. Picasso's La Joie De Vivre
 So hard to choose a favourite, but I think this might be it.
